Cinnamon is one of my favourite ingredients to bake with. It is naturally sweet, adds great flavour and smells like Christmas. What more could one ask for? This Cinnamon cake is a vanilla cake elevated to a charming tea cake with the simple addition of cinnamon and sugar. It is non demanding but high on rewards and makes a great evening snack and is just that missing piece that can change a quiet evening to something sweet. It will pair perfectly with coffee or tea and make a great additon to a high tea menu or breakfast buffet, because we my friends, are here to romantacise life.

Some tips to bake this Cinnamon Roll Cake
This cake is very simple to make and these are just a couple of things I’d take care with.
- Don’t subsitute the buttermilk with milk. In this recipe, you will see, you need to mix milk with vinegar and let it rest. This is basically the buttermilk you will use for the cake. It’s great if you find reguglar, non flavoured buttermilk but I have never seen them in stores around here. So milk +vinegar is the answer to instant buttermilk, when required in cakes
- This cake is complete on its own but if you want to take it to dessert level, add a thin layer of cream cheese frosting. You can find the recip here. You’ll need less than half the quantity this recipe makes.
A simple tea cake, elevated to a charming loaf, with the addition of cinnamon and sugar.
Ingredients
2 cups flour
3/4 + 1/2 cup sugar
1 tsp baking powder
1 1/4 cups milk , mixed with a tbsp of vinegar and set aside for 10 mins
1 large egg
1 tsp vanilla extract
1/4 cup vegetable oil
1 tbsp cinnamon powder
Directions
- Preheat the oven to 180 C , grease and line a medium sized loaf tin or keep ready a silcone loaf pan
- In a large bowl, mix the flour, 3/4 cup of sugar and baking powder, whisk lightly
- In a separate measuring jug, mix the milk mixture, egg, vanill and oil . Whisk lightly, then add to the dry ingredients
- In a separate small bowl, mix the remaining 1/2 cup of sugar and cinnamon powder
- Spread half the cake batter in the prepared loaf pan, then sprinkle half the cinnamon sugar mixture, repeat with the remaining batter and cinnamon mix
- With a flat knife, swirl the batter and sugar mix in the pan a few times
- Bake in a preheated oven at 180 for about 90-100 minutes or until a toothpick inserted in the centre of the cake comes out clean
