Gulab Jamun Tiramisu was a combination I didn't know I needed but I'm so glad I put the two together. It might just be my new favourite way to have Tiramisu.
Don't be intimidated by what looks like a lengthy process. It's very simple to make the different components and then assemble them.
Here's how I made it.
40 ladyfinger biscuits
16 gulab jamuns, cut into halves
For the milk mixture
2 cups milk
100 ml condensed milk
A pod of cardamom
A few strands of saffron
For the Saffron custard
1/2 ltr milk
4 tbsp sugar
2 tbsp custard powder
A few strands of saffron
A pod of cardamom
For the filling
2 1/2 cups whipped cream
2 tbsp icing sugar
400 gms mascarpone cheese
1. For the milk mixture, mix everything in a saucepan and bring to a boil, then reduce the heat to low and let it simmer for about 5 mins. Leave it to cool before use.
2. Make the custard according to packet instructions but add the saffron and cardamom to to infuse in the milk first. Leave to cool before use.
3. Mix everything together for the filling and set aside.
To assemble.
1. Take half the biscuits, dip each one in the milk mixture, one by one and spread on the bottom of a large rectangular serving dish to make a layer.
2. Top with half the whipped cream filling
3. Then put half of the jamuns to make another layer.
4. Continue with the rest of the biscuits, dipped in the milk mixture. Then spread the cooled down custard to make another layer
5. Top with the remaining whipped cream mixture and jamuns.
6. Leave to chill in the fridge for at least 2 hours before serving.

I make this wheat banana bread all the time because I need just ten minutes to make this batter. Then pop it in the oven and forget about it for about an hour. The rewards are high for such bare minimum effort.
3 bananas, overripe, mashed
1/2 cup melted butter
1/2 cup brown sugar
2 eggs
1 tsp vanilla essence
1/2 cup cream
Juice of 1/2 a lime
1 tsp baking soda
3/4 cup wheat flour
A handful of chocolate chips.
Whisk all ingredients together in a large bowl. Pour in a greased and lined loaf pan. Bake in a preheated oven, at 180 C, 55 minutes.

Cinnamon Swirl Cake
2 cups flour
3/4+1/2 cups sugar
1 tsp baking powder
1 1/4 cup milk, mixed with 1 tbsp vinegar, ( left to rest for 5-10 mins)
1 large egg
1 tsp vanilla
1/4 cup oil
1 tbsp cinnamon powder
Preheat the oven to 180 c and line a loaf tin with butter paper.
In a large bowl, mix the flour, 3/4 cup sugar and baking powder.
In a measuring jug, whish together the milk mixture, egg, vanilla and oil.
Add the wet ingredients to the dry ingredients and mix until combined.
In a small bowl, mix the remaining 1/2 cup of sugar and cinnamon powder
Pour half the cake batter into the prepared tin. Then sprinkle half the cinnamon sugar mixture. Repeat with the remaining batter and sugar mixture.
Using a knife, swirl the batter a few times to make patterns with the sugar mix.
Bake for about an hour and twenty mins or until a toothpick inserted in the centre of the cake comes out clean.

As always a simple cake, with almost regular ingredients and it'll take hardly any time at all to put together. It's totally my kind of cake and recipe.

If you think bread & butter pudding is boring, you've been making it the wrong way. Try this recipe and you're going to love this one, perfect for Christmas mornings and holiday breakfasts.
Here's all you'll need
10 slices bread
7 tbsp butter, softened
1 cup mixed dry fruit of your choice ( raisins, almonds, cranberries, cashew nuts)
2/3 cup brown sugar
2 cups milk
2 eggs
* Butter each slice generously on one side and cut each diagonally to make two triangles.
* Lightly butter the baking dish, and place 10 triangles, buttered side down in the dish in a layer.
* Sprinkle with half the sugar and dried fruit.
*Top with the remaining 10 triangles, buttered side up and sprinkle the remaining sugar and dry fruit
* Beat the eggs and mix with the milk and add this liquid all over the bread. Leave to soak for about an hour
*Bake in a preheated oven at 180 C for 40 mins or until the custard has set. Serve warm.
