Lemon Loaf

This is the best and easiest lemon loaf you can make. With regular ingredients and just a little bit of a toss and mix, you can make this delicious lemon loaf with just about 10 ingredients. It’s not sweet or tangy or sour and balances flavours with the right amount of lemon coming through.

I first found this recipe more than a decade ago, claiming that it was a copycat recipe for the Starbucks lemon loaf. Now I never quite got to authenticate that claim because I’ve never had the lemon loaf at Starbucks. However, I’m more than willing to claim that this recipe makes a great Lemon loaf, and with the gentle tweaks I’ve made over the years, I think it’s just perfect.

Expect a soft texture with this cake, not fudgy or dense, but more of a melt-in-your-mouth at first bite kind of feeling. This cake tastes great on its own and needs no additional icing or glaze, but if you’d like to try that, it should work well

  • Chocolate Babka; if you set aside the technicalities of whether it fits the defnition of a loaf or not, there is every other reason to love this babka. I urge you to bake it once and decide if it is worth the effort. I promise you, it’ll become a family favourite instantly.

Lemon Loaf

A simple lemon loaf cake that ticks all the boxes of flavour, texture and effort.

Ingredients

  • 1 1/2 cups flour

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 3 eggs

  • 1 cup sugar

  • 1 tsp vanilla

  • 1/3 cup lemon juice & zest of one lemon

  • 1/3 cup oil

Directions

  • Preheat the oven to 175 °C. Line and grease a medium-sized loaf tin
  • In a bowl, mix the flour, salt, baking powder and baking soda. Set aside
  • In a separate bowl, mix all the wet ingredients, using a whisk
  • Add the dry ingredients to the wet ingredients and whisk until just combined
  • Pour the batter into the prepared tin and bake in a preheated oven at 175 °C for 50-55 minutes or until a toothpick inserted in the middle of the loaf comes out clean
