The Christmas season is incomplete without a Sticky Toffee Pudding. Full of nutty toffee and date flavours, this warm and cozy pudding makes December nights magical. If you already have a recipe for Sticky Pudding, this is the easier one you didn’t know you needed.
What makes a great sticky toffee pudding?
There are two parts to a great sticky pudding. One, the date pudding and two, the toffee sauce. And if you want to elevate it to the perfect dessert, serve the pudding and sauce warm, topped with butterscotch ice cream. You’ll win over even the harshest critics.

Making the Toffee Sauce
Toffee sauce isn’t the same as caramel sauce, although you could use one in place of the other. Toffee sauce is almost always made with brown sugar, giving it a nuttier flavour than caramel sauce, which is made with white sugar and has a more caramel flavour. Both are quite easy to make as long as you ensure the sugar doesn’t burn while cooking. If you’re running low on time or don’t want to experiment with making the toffee sauce, use store-bought caramel sauce. We listen and we don’t judge, really.

An easy date sticky pudding with toffee sauce, that has Christmas nostalgia written all over it.
Ingredients
85 gms butter, softened
1/2 cup brown sugar
2 eggs
1/2 tbsp instant coffee powder
1 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1 cup pitted dates, roughly chopped
1/2 cup chopped walnuts or cashew nuts
3/4 cup hot water
- For the Toffee Sauce
120 gms butter
1 1/4 cups light brown sugar
6 tbsp cream
Directions
- Preheat the oven to 180 °C. Grease and line an 8-inch round baking tin with butter paper
- In a large bowl, mix together the butter, sugar, eggs, coffee powder, flour, baking soda and baking powder. Beat lightly until smooth
- Stir in the dates and the nuts, and finally, the hot water
- Spoon the mixture into the prepared cake tin and put to bake in a preheated oven for 55-60 minutes
- For the Toffee sauce
- When the pudding is close to getting done, make the Toffee sauce. Put the butter and sugar in a small saucepan and heat gently. Stir continuously until the butter has melted and the sugar has dissolved
- Stir in the cream and heat until just mixed
- To serve, serve a portion of the pudding with the toffee sauce, both warm and optionally a scoop of butterscotch ice cream
